Leftover Egg White Bites – 70mg per Bite, Challenge #13

These breakfast-y egg white bites are easy to pull together and use up some leftovers you may have laying around! With the egg whites and cheese, sodium content should come out to around 70mg per muffin!

I saw this recipe on an ad on Facebook. I quickly wrote down the ingredients and cooking instructions. I tried to look it up later, but could never find it again! Earlier in the week I made tacos with black beans. To make them, I cooked up half a white onion and a couple sweet peppers, then added a can of no salt added black beans and a bunch of seasonings (cumin, paprika, onion powder, garlic powder, Daks Original Red and Taco Knight seasonings. We didn’t eat all of the beans for the tacos, so I used the leftovers for this recipe. The beauty of this recipe is that it doesn’t have to be meticulously measured out. Just toss some ingredients into a muffin pan and cook! I made 6 muffin with the measurements below. I added the ingredients one at a time, using my scale to measure how much so I could calculate the sodium content. Eat fresh or freeze for later!

Try some other toppings other than what is listed below! Try bel pepper, spinach, green onion, sweet peppers, gruyere cheese, and tomato. What other toppings would you include?

Ingredients

  • Frozen hashbrowns
  • No Salt Added Beans (I used leftover beans from tacos)
  • Egg whites (I used 4.5 servings at around 70mg per serving)
  • 1/4 cup shredded cheese (1 serving at around 130mg per serving)
  • Black pepper
  • Chives or green onions

Preparation

  1. Pre heat oven to 350 degrees.
  2. Spray muffin tin with a non stick spray.
  3. Fill bottom third of muffin tin with hashbrowns.
  4. Spoon in black beans to center third of the tin.
  5. Sprinkle cheese on top of black beans.
  6. Fill rest of cup with egg whites.
  7. Top with green onions or chives and black pepper.
  8. Bake for 15-20 minutes, or until egg whites are fully cooked.
