2024 Challenge – Recipes

In August 2023, I received some news on my health that caused me to pursue a low sodium diet. The news was rough for me, as I now need to stay at or under 1,000mg of sodium per day. Gone are the days of restaurant mac and cheese reviews, trying new canned soups, and eating on a whim. As 2023 was coming to an end and I began thinking of what my 2024 challenge could be, nothing suits this time period of my life more than focusing on 52 new recipes.

You’ll notice two major themes here – vegetarian and low sodium. I began my vegetarian life style around 2015/2016 (for reasons that are my own) following a brief period of being vegan. My low sodium life style began August 2023. All of these recipes will be both vegetarian and low sodium.

I cannot guarantee that these recipes will be good. This is all experimental and I encourage you to make changes to any recipe that better represent your taste. If I’ve made a recipe and it doesn’t turn out well, I will try my hardest to “save” it, as I do not like to waste food, and I’ll give my honest opinion of it was a hit or a miss.

To make this challenge more complex, I also decided to start this blog so that I could track my recipes in a more organized fashion. This on its own is its own challenge, as I have never created a website or blog, so forgive me if things go wonky at times while I learn!

Recipes will be posted below weekly (or as close to weekly as possible as life gets hectic!).
